用料  

for the marinade: chicken thigh
1onion&1carrot&1clerey&3garlic roughly chopped
thyme& bay leaf
1.5litres red wine shiraz
12 pear onions (& 2 carrots)
200g speck or bacon, cut into 1 cm lardons
500g button mushrooms thyme&bay leaf
100ml brandy or cognac
2tbsp plain flour
thyme & bay leaf

Red wine chicken的做法  

  1. marinade the chicken:
    overnigh

  2. olive oil & butter

    12 pearl onions(&carrots)
    200g bacon:
    12 mushrooms
    remove

    sear the chicken

    return the vegetables

  3. add 2 tbsp flour

    100ml brandy or cognac
    burn off

    add the marinade liquid:reduce.                                  Chicken stock
    (thyme & bay leaf)
    paper lid
    Boil &simmer : 1-2hours

  4. season & parsley
