Apricot pistachio cookie的做法  

1. Beat together 1 cup of salted butter and 1 cup of sugar until fluffy.

2. Add 1 egg and 1.5 tsp vanilla extract, beat to combine.

3. Sift 3 cups of flour, 3/4 tsp salt, and 1/4 tsp baking powder. Add in third and mix till combine.

4. Add 1/3 cup roughly chopped unsalted roasted pistachio and 1/2 cup of diced apricot.

5. Split into two dough. Roll up in a log and refridge for at least 2 hrs.

6. Bake at 350 F for 12-15 mins until set and golden brown.
