  1. ingredients
    4 cups shredded green cabbage
    1 cup shredded carrots
    1/4 cup apple cider vinegar
    2 Tablespoons maple syrup
    1/4 teaspoon dry mustard
    1/4 teaspoon ground celery seed
    1/4 teaspoon sea salt
    1/4 teaspoon ground pepper
    Instructions
    In a large bowl toss together shredded cabbage and carrots.
    Combine vinegar, maple syrup, dry mustard, celery seed, salt and ground pepper in a small bowl. Pour dressing over cabbage mixture and toss to coat. Let mixture sit for at least 10 minutes in the fridge, stir and serve.

  2. Ingredients
    1/4 head green cabbage
    1/4 head red cabbage
    2 medium carrots
    2 tablespoons vegan mayo (use a low-fat one like my Tofu-Cashew Mayo)
    2 tablespoons soy yogurt
    1 1/2 tablespoon cider vinegar
    1 1/2 teaspoon agave nectar
    1/4-1/2 teaspoon dill weed, caraway seed, or celery seed
    1/8 teaspoon freshly ground black pepper
    1/2 teaspoon salt (or to taste)

  3. Creamy coleslaw
    INGREDIENTS
    1 head green cabbage (or a mix of green/purple, thinly sliced by hand or with a food processor or mandoline)
    2 carrots (peeled and shredded)
    3/4 cup sugar
    1/4 cup kosher salt
    FOR THE DRESSING:
    3/4 cup savory cashew cream*
    1/4 cup unsweetened rice vinegar or apple cider vinegar
    3 tablespoons sugar or maple syrup
    2 tablespoons dijon mustard
    1 teaspoon whole celery seeds or 1/4 teaspoon ground celery seed
    2 teaspoons freshly ground black pepper (or more to taste)

  4. OIL FREE RED CABBAGE COLESLAW
    Most of a head of red cabbage, shredded or chopped finely (8 cups)
    2½ cups of shredded or julienne carrots
    ½ cup + 2 tbsp apple cider vinegar (we use Bragg’s raw)
    ¾ tsp salt
    2 tbsp maple syrup, agave, or honey
    1 cup of scallions
    1 cup parsley
    3 tbsp freshly chopped dill (or more to taste)
    pepper to taste
